I fear I won't introduce much new noteworthy software, but here are my choices nevertheless (in no particular order):
Xfce – window/desktop manager of choice
Firefox – my favourite browser, the extension system is the reason it hasn't been overtaken by
Opera to this date on my list

Eclipse – what would a Java programmer do without it? I use it for pretty much anything remotely resembling a larger project as well though

Pidgin – Multi-Protocol instant messenger (I still have important people on my
ICQ buddylist and somewhat don't like those gateway thingies…)

GIMP – everyone needs an image manipulation tool, might as well be a good one

Inkscape – if
SVG comes out and wants to play
Jabref – bibtex bibliography management for my research
Freemind – mindmap tool, use it for quite a lot of stuff these days

VirtualBox – for when I need a virtualized version of “the other
OS”
colorname – you won't believe it, but I actually use it
